Reaction mechanism of milk protein determination byformaldehyde tritation

Introduction

The determination of milk proteins by formol titration was first suggested by Steinegger (17), Richmond and Miller (15) and Pyne (13). Later it was adapted suitably for Dairy products by Schulz, Voss and Kay (16); it has also been aplied in Spain by Aparicio (1), in Italy by Procopio and Lorenti (12) and recently by Wolfschoon and Vargas (20) in Brazil, However, concerning the reaction mechanism in milk, the literature does not provide much further detail (1, 5, 7, 13, 15).

For a general rewiew concerning the reactions between carbonyl groups and mines, we refer to the reviews of Feeney et al. (3) and French and Edsall (4). The aim of this paper is to suggest na explanation for the Chemical reactions which occur during the formol titration and which were dealt with in a previous paper (20).
